Easy to make…and even easier to devour!

Make your party guests chuckle with these adorable and delicious Santa Hat Brownie Bites!

Ingredients

Mini Brownie Bites

  • 115g unsalted butter
  • 200g caster sugar
  • 200g unsweetened cocoa powder
  • 58g 70% cocoa dark chocolate
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 2 medium eggs
  • 75g self raising flour

Santa hats

  • 18 strawberries, with the stalks and tips cut off.
  • 140ml whipping cream
  • 18 white chocolate chips

Method

Mini Brownie Bites

Butter a mini muffin tin (with 18 muffin basins). Preheat the oven to 170°C (gas mark 3).

Place the butter in a large bowl over a bain marie.

When the butter begins to melt, add the sugar, cocoa powder and chocolate. Stir occasionally until the butter and chocolate have completely melted and mixed together.

Remove the bowl from the the heat and allow to cool slightly.

Stir in the vanilla. Mix in the eggs, one at a time.

Mix in the flour until the batter is thick and smooth.

Spoon the batter evenly into the cupcake basins. Cook for 15 to 20 minutes, or until moist but firm in the middle.

Cool at room temperature.

Santa hats

With a whisk, beat the cream until thick.

Spoon or pipe the cream on top of each brownie bite. Place the strawberries on the cream.

Add a dot of cream on the top of each strawberry and place a white chocolate chip on top of the cream.
